In the creed, it's a small c "catholic" to represent "the church" universal as you've explained so well. But to capitalize it, as it is *not* in the creed, is to bring to mind the Catholic Church, which I'm sure you did not mean to do. I love the creed, but this is an important distinction that must be made.
